Hearts of Palm Salad
INGREDIENTS
HEARTS OF PALM SALAD
- 1 c Hearts Of Palm, sliced in half rounds
- 1 c Jicama, diced small
- ½ c Radishes, diced small
- 2 Black Radish, julienned, for garnish
- 1 Blood Orange, sliced into segments, for garnish
- Kosher Salt
- Ground Black Pepper
WHITE BALSAMIC VINAIGRETTE
- 2 T Shallots, finely chopped
- 1 t Dijon Mustard
- 2 T White Balsamic Vinegar
- 4 T Olive Oil
- Kosher Salt
- Ground Black Pepper
INSTRUCTIONS
FOR THE HEARTS OF PALM SALAD
- Trim and clean hearts of palm.
- Blanch in salted water for about 3 minutes; shock in ice water, then cut into 1/8-inch rounds.
- In a small mixing bowl, stir together jicama, hearts of palm and radish; toss with white balsamic vinaigrette (recipe follows).
- Garnish with black radishes and blood orange.
- Season to taste with salt and pepper.
FOR THE WHITE BALSAMIC VINAIGRETTE
- In a small mixing bowl, stir together shallots, mustard and vinegar.
- Slowly whisk in olive oil.
- Season to taste with salt and pepper.
