Hearts of Palm Salad

INGREDIENTS

HEARTS OF PALM SALAD

  • 1 c Hearts Of Palm, sliced in half rounds
  • 1 c Jicama, diced small
  • ½ c Radishes, diced small
  • 2 Black Radish, julienned, for garnish
  • 1 Blood Orange, sliced into segments, for garnish
  • Kosher Salt
  • Ground Black Pepper

WHITE BALSAMIC VINAIGRETTE

  • 2 T Shallots, finely chopped
  • 1 t Dijon Mustard
  • 2 T White Balsamic Vinegar
  • 4 T Olive Oil
  • Kosher Salt
  • Ground Black Pepper
INSTRUCTIONS

FOR THE HEARTS OF PALM SALAD

  1. Trim and clean hearts of palm.
  2. Blanch in salted water for about 3 minutes; shock in ice water, then cut into 1/8-inch rounds.
  3. In a small mixing bowl, stir together jicama, hearts of palm and radish; toss with white balsamic vinaigrette (recipe follows).
  4. Garnish with black radishes and blood orange.
  5. Season to taste with salt and pepper.

FOR THE WHITE BALSAMIC VINAIGRETTE

  1. In a small mixing bowl, stir together shallots, mustard and vinegar.
  2. Slowly whisk in olive oil.
  3. Season to taste with salt and pepper.
