Rich Chocolate Lava Cake

Preheat oven to 350ºF
INGREDIENTS
CHOCOLATE LAVA CAKE
- 10 ½ oz Butter (Unsalted)
- 10 ½ Dark Chocolate Coverture, chopped
- 2 ½ oz Flour
- 6 17⁄24 fl oz Egg
- 6 17⁄24 fl oz Egg Yolks
- 5 ½ oz Sugar
DOUBLE CHOCOLATE SAUCE
- 5 fl oz Heavy Cream
- 5 fl oz Milk
- 8 oz Brown Sugar
- 14 oz Dark Chocolate Coverture, chopped
- 3 ½ oz Rich Cocoa Powder
INSTRUCTIONS
FOR THE CHOCOLATE LAVA CAKE
- Melt the butter and chocolate over a double boiler.
- Sieve the flour and whisk in with a hand whisk into the chocolate and butter mixture.
- Whisk the eggs, egg yolks and sugar together, until light.
- Pour the egg mixture into the chocolate mixture and combine until smooth,
- Take off the double boiler and pour the mixture into prepared muffin molds.
- Place in a preheated oven at 350ºF for no longer than 10 to 15 minutes, the center still needs to be soft.
- Refrigerate immediately to stop the baking process, or serve right away.
FOR THE DOUBLE CHOCOLATE SAUCE
- Place the cream, milk and sugar in a double base pot, and place over heat until boiling.
- Place the chocolate and cocoa powder in a mixing bowl.
- Take the pot off the stove and pour the cream mixture over the chocolate mix, whisk in until the chocolate has melted and the mixture is smooth.
- If still lumpy, strain the chocolate sauce
- Place aside and serve warm
FOR THE SERVICE
- Place the chocolate lava cake in the middle of a dessert bowl.
- Pour the warm double chocolate sauce over the cake.
- Serve with vanilla bean ice cream.
