Rich Chocolate Lava Cake

Preheat oven to 350ºF
INGREDIENTS

CHOCOLATE LAVA CAKE

  • 10 ½ oz Butter (Unsalted)
  • 10 ½ Dark Chocolate Coverture, chopped
  • 2 ½ oz Flour
  • 6 1724 fl oz Egg
  • 6 1724 fl oz Egg Yolks
  • 5 ½ oz Sugar

DOUBLE CHOCOLATE SAUCE

  • 5 fl oz Heavy Cream
  • 5 fl oz Milk
  • 8 oz Brown Sugar
  • 14 oz Dark Chocolate Coverture, chopped
  • 3 ½ oz Rich Cocoa Powder
INSTRUCTIONS

FOR THE CHOCOLATE LAVA CAKE

  1. Melt the butter and chocolate over a double boiler.
  2. Sieve the flour and whisk in with a hand whisk into the chocolate and butter mixture.
  3. Whisk the eggs, egg yolks and sugar together, until light.
  4. Pour the egg mixture into the chocolate mixture and combine until smooth,
  5. Take off the double boiler and pour the mixture into prepared muffin molds.
  6. Place in a preheated oven at 350ºF for no longer than 10 to 15 minutes, the center still needs to be soft.
  7. Refrigerate immediately to stop the baking process, or serve right away.

FOR THE DOUBLE CHOCOLATE SAUCE

  1. Place the cream, milk and sugar in a double base pot, and place over heat until boiling.
  2. Place the chocolate and cocoa powder in a mixing bowl.
  3. Take the pot off the stove and pour the cream mixture over the chocolate mix, whisk in until the chocolate has melted and the mixture is smooth.
  4. If still lumpy, strain the chocolate sauce
  5. Place aside and serve warm

FOR THE SERVICE

  1. Place the chocolate lava cake in the middle of a dessert bowl.
  2. Pour the warm double chocolate sauce over the cake.
  3. Serve with vanilla bean ice cream.
