Cream of Green Asparagus Soup

INGREDIENTS

SOUP

  • 1 lb Asparagus, sliced 1cm
  • 1 T Onion, finely chopped
  • 8 fl oz Heavy Cream
  • 1 T Beurre Manie
  • 3 fl oz Olive Oil
  • 1 t Kosher Salt
  • 1 t Ground Black Pepper
INSTRUCTIONS

FOR THE SOUP

  1. Place the olive oil in a thick bottomed pan; add the onions and sauté until tender. Add the asparagus and cook until nicely glazed.
  2. Add the chicken stock and simmer for 10 minutes; skim while simmering.
  3. Use a hand blender to puree the soup, and add the heavy cream. Bring to a boil. Add the Beurre manié if required to thicken.
  4. Season with salt and pepper to taste.
  5. Garnish each bowl with half a teaspoon of crab meat and half a teaspoon of thinly sliced asparagus.
