Sweet Pizza

with Vanilla Olive Oil

INGREDIENTS

DOUGH

  • 3 c Flour
  • ½ T Yeast
  • 1 T Kosher Salt
  • ½ c Olive Oil
  • ¼ c Water

SYRUP

  • ¾ c Water
  • 1 ¼ c Sugar
  • 4 Mango, peeled and thinly sliced
  • 1 Vanilla Bean, split
  • 13 c Olive Oil

ASSEMBLY

  • 1 c Mascarpone Cheese
  • 2 c Raspberries
  • 1 c Blueberries
  • ¾ c Almonds, toasted
  • ¼ c Mint, shredded
INSTRUCTIONS

FOR THE DOUGH

  1. Sieve the flour, place in a mixing bowl, add the dried yeast and salt, make a well in the center and gradually mix in the oil and ¼ cup of water, mix until a smooth dough has been formed.
  2. Let rest for 3 hrs.
  3. When the dough has been rested cut into 8 even sized pieces, roll into a ball and allow to rise in a warm place until the mix has doubled in size.
  4. When doubled in size, On lightly floured surface, roll the dough into an even sized round pizza shaped, about 14 inches in diameter.
  5. Mark the dough all over with a fork and place onto an oven tray or pizza ring.
  6. Using a pastry brush, coat dough with a thin layer of syrup.
  7. Bake in a preheated oven for about 10 minutes, until dough is cooked but not very brown.
  8. Cool slightly before proceeding.

FOR THE SYRUP

  1. Boil remaining water and 1 cup sugar together in a medium saucepan for about five minutes to make syrup.
  2. When syrup is ready, dip the mangoes in for five seconds to launch, and remove, using a slotted spoon.
  3. Extract the seeds from the vanilla bean and add to the syrup allow to cool slightly.
  4. Once cool, mix in the olive oil.
  5. Add 2 cup of raspberries to small pot, add ¼ cup of sugar and 1 cup of water, boil together for 2 minutes, liquidize the mix and then strain in a fine strainer.
  6. Set aside to cool.

FOR THE ASSEMBLY

  1. Spread the mascarpone cheese evenly over the pizza dough.
  2. Spread the raspberry sauce over the mascarpone cheese.
  3. Arrange slices of mango on top the pizza in a spiral.
  4. Coat the blueberries with the syrup and sprinkle over the pizza.
  5. Reduce oven heat to 350°F and bake for about 5 minutes, until mixture is set and dough is slightly more browned.
  6. Remove pizza from the oven and sprinkle the toasted almonds on top of the pizza.
  7. Garnish with shredded mint.
  8. Drizzle with the olive oil syrup and cut into eight wedges for serving.
