Peanut Butter Pie

INGREDIENTS

PIE

  • 1 ½ c Creamy Peanut Butter
  • 8 oz Cream Cheese, softened
  • ¾ c Sugar
  • 2 T Butter, melted
  • 1 c Heavy Cream
  • 1 8-inch Baked Pie Shell

GANACHE

  • ½ c Heavy Cream
  • 4 oz Dark Chocolate, chopped
  • 1 T Butter
INSTRUCTIONS

FOR THE PIE

  1. With an electric mixer, blend the peanut butter and cream cheese until smooth.
  2. Add the melted butter to peanut butter mixture, then fold in whipped cream.
  3. Pour into the baked pie shell and refrigerate for 1 hour.
  4. Glaze with Ganache (recipe below) if desired.

FOR THE GANACHE

  1. In a saucepan over medium heat, bring the cream and butter to a boil.
  2. Remove from heat and fold in chocolate until no streaks of white remain.
  3. Cool unto lukewarm, then glaze pie.
  4. Refrigerate for at least two hours before serving.
