Smokey Chicken, Vegetables And Cheddar Cheese Fritters

with Smoked Salt And Pomegranate Barbecue Sauce

INGREDIENTS

SMOKEY CHICKEN FRITTERS

  • 10 Chicken Leg Quarters, roasted
  • 2 Red Bell Pepper, finely chopped
  • 2 Green Bell Pepper, finely chopped
  • 2 White Onion, chopped
  • 2 T Oregano
  • 8 oz Cheddar Cheese, grated
  • 6 oz Flour
  • 1 t Cajun Spice
  • 1 t Jerk Spice
  • 6 drops Liquid Smoke
  • 4 Egg

POMEGRANATE BARBECUE SAUCE

  • 500 mL Barbecue Sauce
  • 100 mL Pomegranate Liquor
  • 2 drops Liquid Smoke
  • 1 Onion, chopped
  • 2 Garlic, chopped

GARNISH

  • 2 Red Bell Pepper, julienne
  • 1 T Cilantro, chopped
  • 2 Red Onion, chopped
  • ½ Lime
  • 200 mL Olive Oil
INSTRUCTIONS

FOR THE SMOKEY CHICKEN FRITTERS

  1. Remove the Skin and Bones from the Chicken and break (by hand) the chicken into small pieces--mix with the remaining ingredients.  
  2. Season with salt and ground black pepper and chill. 
  3. Shape into fritters and deep fry.

FOR THE POMEGRANATE BARBECUE SAUCE

  1. Saute the Onions and Garlic.
  2. Add the BBQ sauce, and Pomegranate Liquor, bring to the boil and simmer for 5 minute.
  3. Reserve for service.

FOR THE GARNISH

  1. Mix the Ingredients together.
  2. Place on a perforated pan.
  3. Chill and reserve for service.

FOR THE SERVICE

  1. Place the Garnish on the base of the plate and place 3 deep fried Chicken Fritters on top.
  2. Serve with a ¼ Lime.
  3. Garnish the Sauce with a cilantro leaf.
