Grilled Shrimp And Seared Scallop Pasta

INGREDIENTS

  • 8 Linguine
  • 2 c Roma Tomato Sauce, see recipe or use preferred store bought sauce
  • 2 clvs Garlic, thinly sliced
  • 5 T Butter, divided
  • 2 c Spinach
  • Kosher Salt
  • 12 Shrimp, peeled, deveined
  • 12 Scallops (10/20)
INSTRUCTIONS

FOR THE ENTREé

  1. Cook linguine according to package directions; drain and mix with spaghetti sauce. Keep warm.
  2. In a large skillet, sauté garlic in 2 tablespoons butter until golden; add spinach and cook until wilted.
  3. Season with salt and pepper, and set aside.
  4. Heat remaining 3 tablespoons butter in a skillet over medium-high heat; add shrimp and scallops, and cook about 3 minutes, or until shrimp turn pink and scallops turn white, turning once.
  5. Top pasta with cooked spinach, and serve with shrimp and scallops arranged around the plate.
