Mozzarella And Tomato Salad

INGREDIENTS

SALAD

  • 8 T Balsamic Vinegar
  • 4 T Extra Virgin Olive Oil
  • 4 c Mixed Greens
  • 8 oz Mozzarella Cheese, sliced into ¼" rounds
  • 4 Plum Tomatoes, quartered and seeded
  • 4 T Basil Pesto
  • 1 t Chives, chopped
  • 4 Chives, cut in half, for garnish
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
INSTRUCTIONS

FOR THE SALAD

  1. Mix the balsamic vinegar with the olive oil in a small bowl.
  2. Toss the greens with half of the balsamic vinaigrette and portion onto 4 plates.
  3. Place the mozzarella on top of the greens.
  4. Lay the tomatoes on top of the mozzarella.
  5. Add pesto and drizzle remaining vinaigrette onto cheese and tomatoes.
  6. Sprinkle with chopped chives.
  7. Place the lengthwise-cut chives on top of the salad.
  8. Sprinkle with salt and pepper to taste.
