Watermelon Soup

INGREDIENTS

SOUP

  • 6 lb Watermelon, diced
  • 2 T Mint Leaves, chopped
  • 1 T Sugar
  • 2 T Lemon Juice
  • 1 c Sugar Water, ¾ cup water mixed with ¼ cup sugar
  • 1 t Ginger, chopped
  • ¼ c Sparkling Wine
INSTRUCTIONS

FOR THE SOUP

  1. Combine 1 cup of the watermelon with mint and sugar in a bowl. Set aside.
  2. Blend remaining 8 cups watermelon, lemon juice, sugar water, and ginger in a blender until smooth.
  3. Let sit ½ hour.
  4. Strain soup; divide among 8 bowls.
  5. Top each with 1/8 cup reserved watermelon.
