Creamy Butternut Squash Soup

INGREDIENTS

SOUP

  • ½ c Onion, chopped
  • ½ c Leek
  • 3 clvs Garlic, minced
  • 3 Apple, chopped
  • 5 c Butternut Squash
  • 1 Apple, juiced
  • 8 c Vegetable Stock
  • 1 t Turmeric Powder
  • 2 c Heavy Cream
  • 3 t Flour
  • 1 t Butter
INSTRUCTIONS

FOR THE SOUP

  1. Sauté onion, garlic, and leeks in hot oil.
  2. Add squash and apples.
  3. Deglaze with apple juice, add vegetable stock and turmeric, salt and pepper.
  4. Add cream, season to taste.
  5. Using the flour and butter make a roux and use to thicken soup until creamy and medium thick.
  6. Adjust seasoning if necessary.
