Creamy Butternut Squash Soup
INGREDIENTS
SOUP
- ½ c Onion, chopped
- ½ c Leek
- 3 clvs Garlic, minced
- 3 Apple, chopped
- 5 c Butternut Squash
- 1 Apple, juiced
- 8 c Vegetable Stock
- 1 t Turmeric Powder
- 2 c Heavy Cream
- 3 t Flour
- 1 t Butter
INSTRUCTIONS
FOR THE SOUP
- Sauté onion, garlic, and leeks in hot oil.
- Add squash and apples.
- Deglaze with apple juice, add vegetable stock and turmeric, salt and pepper.
- Add cream, season to taste.
- Using the flour and butter make a roux and use to thicken soup until creamy and medium thick.
- Adjust seasoning if necessary.
