Maple Glazed Salmon
with Onion-Mashed Potatoes
Serves 4
Preheat oven to 350ºF
INGREDIENTS
MAPLE GLAZE
- ¼ c Brandy
- 1 ¼ c Maple Syrup
- 1 T Cornstarch
- 2 T Water
ONION-MASHED POTATOES
- 2 Onion
- 2 T Olive Oil
- 2 lb Red Potatoes
- 2⁄3 c Milk, warmed
- 2 T Butter (Unsalted)
- Kosher Salt
- Ground White Pepper
SALMON
- 4 Salmon Filet, 7 oz each
- 2 T Olive Oil
- Kosher Salt
- Ground Black Pepper
GARNISH
- Red Bell Pepper, diced
- Scallion, minced
INSTRUCTIONS
FOR THE MAPLE GLAZE
- Pour brandy in a pan and flambé for 5 seconds.
- Add the syrup and heat.
- Whisk in the cornstarch and water mixture, and simmer for 5 minutes, stirring.
- Cool to room temperature.
FOR THE ONION-MASHED POTATOES
- Preheat oven to 375°F.
- Toss the chopped onions with olive oil and bake for 15 minutes, until soft.
- Purée onions in a blender.
- Cover potatoes with water in a medium saucepan and boil until tender when pierced with a fork.
- Put drained, warm potatoes in a mixing bowl.
- Add milk and butter, and mash with an old-fashioned potato masher. Season to taste.
FOR THE SALMON
- Preheat oven to 350°F.
- Brush the salmon with olive oil and season with coarse salt.
- In a preheated sauté pan, sear both sides.
- Place on a baking sheet and drizzle 1 tablespoon of the Maple Glaze on each salmon fillet.
- Bake 12 to 15 minutes, or until desired doneness.
FOR THE GARNISH
- Top potatoes with salmon and drizzle with remaining glaze.
- Top with diced red peppers and minced scallion.
