Maple Glazed Salmon

with Onion-Mashed Potatoes

Serves 4
Preheat oven to 350ºF
INGREDIENTS

MAPLE GLAZE

  • ¼ c Brandy
  • 1 ¼ c Maple Syrup
  • 1 T Cornstarch
  • 2 T Water

ONION-MASHED POTATOES

  • 2 Onion
  • 2 T Olive Oil
  • 2 lb Red Potatoes
  • 23 c Milk, warmed
  • 2 T Butter (Unsalted)
  • Kosher Salt
  • Ground White Pepper

SALMON

  • 4 Salmon Filet, 7 oz each
  • 2 T Olive Oil
  • Kosher Salt
  • Ground Black Pepper

GARNISH

  • Red Bell Pepper, diced
  • Scallion, minced
INSTRUCTIONS

FOR THE MAPLE GLAZE

  1. Pour brandy in a pan and flambé for 5 seconds.
  2. Add the syrup and heat.
  3. Whisk in the cornstarch and water mixture, and simmer for 5 minutes, stirring.
  4. Cool to room temperature. 

FOR THE ONION-MASHED POTATOES

  1. Preheat oven to 375°F.
  2. Toss the chopped onions with olive oil and bake for 15 minutes, until soft.
  3. Purée onions in a blender.
  4. Cover potatoes with water in a medium saucepan and boil until tender when pierced with a fork.
  5. Put drained, warm potatoes in a mixing bowl.
  6. Add milk and butter, and mash with an old-fashioned potato masher. Season to taste.

FOR THE SALMON

  1. Preheat oven to 350°F.
  2. Brush the salmon with olive oil and season with coarse salt.
  3. In a preheated sauté pan, sear both sides.
  4. Place on a baking sheet and drizzle 1 tablespoon of the Maple Glaze on each salmon fillet.
  5. Bake 12 to 15 minutes, or until desired doneness. 

FOR THE GARNISH

  1. Top potatoes with salmon and drizzle with remaining glaze.
  2. Top with diced red peppers and minced scallion.
