Departing the ship was really easy. All Disney excursions have you follow a cast member with a sign on a pole, that gets handed off to a tour guide for the excursion. We took a shuttle bus to Dolphinaris. Once there, we immediately checked in and were assigned our areas for swimming with the dolphins.

The main things I was disappointed with: the dolphins don't seem to have an opportunity to access large bodies of water, and they are used for hours every day for excursions just like this one. It made me feel a little guilty, and I actually didn't "ride" my dolphin for that reason, although it did look like a lot of fun when others did it.
Also, the photos that could be purchased were some of the most expensive I've ever seen on an excursion. So maybe book your dolphin swims at different times for your group, and have someone in your party watching from the observation area, to take photos for you.

Don't forget to take advantage of the kayaking and other activities available.

Finally, for the included food: not the best, but also not horrible. The margarita type drinks were free, and although I only had 2, it didn't seem like there was a limit on how many you could have.
